Gluten Free Recipe Round-Up

I haven't been cooking much lately. Which you've probably noticed. Sorry. BUT I do have an awesome round-up of recipes from some of my favorite blogs for you.  A co-worker of mine recently discovered she has Celiac Disease so anything with gluten is a no go. 

So this whole gluten-free thing sounds like a bummer at first. I mean no pastries? No pasta? How can you live without all of these delightfully empty calories? As I browsed for ideas, though, I realized there are so many amazingly creative and wonderful gluten-free dishes out there. Here are a few that made me drool.

Collard Greens

I've never really loved collards. That is, until I had them Abe Becker style. An awesome chef-turned-web developer and new family friend, Abe showed me that collards can be amazing if you don't cook the crap out of them. I attempted to make Abe's version the other night and I think they turned out pretty good. I even got the boy to eat them. And he's not from around here...


























What You'll Need:
8 ounces collard greens, chopped
2 shallots, diced
1 cup shredded carrots
2 cloves garlic, minced
2 tablespoons bacon or pork fat

What to Do:
Boil collards for about 10 minutes until they start to soften. Meanwhile, saute carrots and shallots in a little bit of oil until the shallots soften. Drain collards and add them to the pan. Toss in garlic and a few tablespoons of pork fat. Cook for another 5-10 minutes  and finish with a dash of hot sauce. Season with salt if desired. Or just add bacon.














There you have it. Delicious and quick collard greens. In case you were wondering, cornbread is a mandatory side dish with these :)
